To me, there’s nothing better than being around the dinner table exchanging stories, catching up on life and enjoying one another’s company around food and drinks!  Unfortunately for me, this means A LOT of sugar! As a mom, I try to make as many healthier choices as I can, but sometimes it’s hard to skip out on all those amazing holiday meals and desserts. Lean Cuisine Honestly Good

Taking care of little ones requires a lot of patience and stamina. Sometimes this mom needs something quick and easy to make for dinner, but most importantly healthy! Luckily for me, Lean Cuisine has launched a new collection of Honestly Good meals made with 100% natural and wholesome ingredients! This week during our weekly visit to Target, I decided to give them a try and take a little break from the kitchen! I had six flavors to choose from and ended up taking home the Honey Citrus Chicken, Lemongrass Salmon, Pineapple Black Pepper Beef and Roasted Red Pepper Chicken. I can’t wait to try the other two dishes! The meal sizes are great and really help us with portion control. It sure helps me feel satisfied and gives me that energy I need to take care of my sweet little family!  We were all delighted as to how tasty each dish was, our kids were all about sharing from everyones plates. I really enjoyed my salmon, which was my personal favorite!  Right now, Lean Cuisine and their farmers are donating a portion of the vegetables for the Honestly Good meals to local communities. My Canadian Favorite Treats

Canada Day is just around the corner and I’ve put together a few of my favorite Canadian treats! I lived in Canada my entire life, but moved to California 6 years ago. We are planning on moving back really soon and I can’t wait to get my hands on some of these goodies!  1. I use to walk up the street to the nearest gas station form the home I grew up in. They would have selections of the BEST 5 cent candies. I would fill a little plastic bag with all my favorites, one of them being these amazing Blue Whales! 2. While I was going to college, I use to work at a yummy coffee franchise called the Second Cup. Long after I worked there, it became my go to coffee place! My favorite drink was the Vanilla Bean Latte! Yum!!  3. I’m sure I’ve talked about Tim Hortons before, because it’s so classically Canadian! I love buying a pack of Timbits, which are the most amazing donut holes! My favorites are the Honey Cruller and Old Fashioned Glaze. My mouth waters just thinking about it, especially paired with a great cup of Timmy’s coffee!  4. I will always remember during high school, a bunch of us would walk to the nearest Mac’s store during break for a delicious slushie! The slushes in Canada are so much better, I find. They are more dense and less airy. They are packed full of flavor too – my favorite was Barq’s Root Beer!  5. I can’t get through a movie without a pack of Smarties! May is a very special month at our house! We are celebrating TWO of our kiddos birthday’s this year for the FIRST time. Ever. We are in the process of adoption, so it’s a very special time of year! Our little girl turned two at the beginning of this month and our little boy will turn 3 at the end! So, I’m going to be throwing two parties in one month and things can get a little crazy!  Right now at Safeway, Vons or Pavilions you can get two 2 liters of 7UP brand sodas, a box of Betty Crocker Cake Mix, Betty Crocker frosting and 24 rainbow candles for only FIVE DOLLARS!! It’s an amazing deal, which is perfect for me! It has saved me a lot of money, especially planning these two birthdays in one month! We recently introduced another new family member into our home this month. A little baby brother to our two little ones! He is the sweetest little man and we are SO blessed to have him with his siblings and in our family at last. Yum! Puppy Chow

My husband and I are always craving a treat at the end of the day. Mostly because we are rewarding ourselves for getting through another day as new parents! Hopefully this habit will die soon, otherwise we are in big trouble! I love this classic recipe – we figured since we are well into the fall season and headed towards another holiday we would whip up a batch of this delicious puppy chow!!! This is the perfect treat to put into a little goodie bags and share with friends and family! They are bound to love it! I placed a bunch aside and put them into these fun paper bags and wrapped them with festive twine. All I need to do is write a little personalized note and pass them around!  Ingredients: 9 cups Rice Chex Cereal (*optional: substitute for Life cereal) 1 cup semi-sweet chocolate chips (*optional: substitute for Nutella)  1/2 cup peanut butter 1/4 cup butter 1 teaspoon pure vanilla extract 1 1/2 cups confectioners’ sugar Directions: 1. Pour cereal into a large bowl and line a large baking sheet with parchment paper. Set both aside for later use.  2. In a large pot on medium heat, combine the chocolate chips, peanut butter and butter for 1 minute; stir often. Keep on heat until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon zip-top food-storage plastic bag. 3. Add icing sugar. Seal the bag tightly shut and shake until everything is well coated. Spread the mixture out onto prepared baking sheet to cool. Store in airtight container...

A Tasty Fall Soup

I discovered this delicious indian-spiced bean and tomato soup in the Martha Stewart magazine. I’ve been searching for recipes that will inspire me to cook and bake more. Sometimes it’s just plain hard when you are chasing after two very busy toddlers. I saw this recipe and decided I would try it out! It was a cool day and it only seemed fitting! I am so glad I did, it was delcious! I made a few changes to make it a bit more healthier and quicker to make for this busy mama!  Ingredients 1 tablespoon extra virgin olive oil 1 1/2 cups finely chopped onion 1 tablespoon plus 2 teaspoon minced garlic 2 tablespoons finely grated peeled fresh ginger (from a 2-inch piece)  1 or 2 green thai chiles, jalapeno chiles or other fresh chiles – finely chopped 1 teaspoon cumin 1 teaspoon ground corionder 1/4 teaspoon ground cinnamon 1/4 teaspoon ground turmeric 1 can (15 ounces) peeled plum tomatoes, coarsely chopped with juice 4 cans black beans with the juice Pinch of salt Non-fat yogurt Cilantro  Pita Chips for serving Directions: Heat oil in a 4-quart pot over medium heat. Add onion and garlic; cook, stirring occasionally, until onion is softened and golden, about 8 minutes. Add ginger, chopped chiles, and spices; cook, stirring occasionally, until fragrant, about 2 minutes. Stir in tomatoes and their juice, beans and their liquid, and salt. Bring to a boil, reduce heat, and simmer until thickened slightly, about 10 minutes. Coarsely mash a third of the beans in pot using a potato masher or an immersion blender; stir to blend into soup....

Lemon Chicken Tortellini Soup

It’s finally cool enough to start serving those hearty and delicious soups again! There are so many recipes I’ve been wanting to try and I am so happy to cook a simple, yet satisfying dinner for my little family!  This is a recipe I derived from Rachel Ray. I changed a few things to kind of make it my own and I think it turned out great! It’s a gorgeous, rustic looking dish.  Grocery List: Chicken Sausage ( I used the gouda chicken sausage from Costco, very tasty) Salt and pepper 4 cups chicken broth 2 cups water 1- 9 ounce bag  tortellini pasta 2 cups shredded kale 1 1/2 cups frozen peas Grated peel and juice of 1 lemon 1/4 cup chopped fresh mint 2-3 sprigs of chopped scallions  Cooking Directions: Add the chicken broth and water to dutch oven or pot and bring to a simmer. Add the tortellini and cook according to the package directions. Cook on low and stir in the chicken sausage, the kale, peas, scallions, lemon peel, lemon juice and mint. Season with salt and pepper. Let it cook on low until the kale has softened.  I can’t say I’ve ever had a soup quite like this before, but there is something very fresh about it. The mint seems to bring the whole thing to life!
