While in Northern California, I have been enjoying these relaxing days on my in-laws acreage. It’s so beautiful here, their home is amazing. My mother-in-law is a wonderful host! My husband and I have been enjoying all the cute shops and even came across a local farmer’s market! I suggest finding your veggies here for pickling, so fresh and delicious!

The other night, we had most of the  family in the kitchen as we tuned in to learn how to pickle for the first time. It was surprisingly simple and so fun! I felt so nostalgic, like I went back to a simpler time. 

Here is a simple recipe and technique for you to try at your home! I am sure you too will enjoy it as much as I did! 

Ingredients

Cucumbers – coursely chopped

Red and Green peppers- chopped

Onion or red hot pepper – finely chopped

Sugar

Vinegar

Cloves

Pickling spice

Turmeric

What to do

First, soak cucumbers overnight and sterilize jars before using. Pack the first 3 ingredients in the jars. Boil 5 cups of sugar, 5 cups of vinegar, 1 tsp cloves, 2 tbsp of pickling spice and 1 tsp turmeric. Once it has boiled, pour into jar, leaving enough room at the top of the jar to expand. Seal and turn upside down for 24 hours, then store for 4-6 weeks!
